bo ssäm faqs

the bo ssäm (ssäm is korean for enclosed or wrapped) includes a whole slow cooked pork shoulder, a dozen oysters, white rice, bibb lettuce, ssäm sauce (korean bbq sauce), kimchi and ginger scallion sauce. guests are encouraged to make wraps with the pork and condiments or eat as they please.

q: how much is it?
a: $200 for your entire party, not including additional food and drinks ordered, tax and tip. please note, we only accept a maximum of four credit cards per table.

q: what are the available time slots?
a: we offer the bo ssäm at lunch and dinner. the lunch bo ssäm is offered everyday at 12, 12:30, and 1pm. for dinner, on sunday to thursday, slots are available at 5, 6, 6:30, and 10 pm. bo ssäm reservations are available on friday at 5, 5:30, 6, 11 and 11:30pm. on saturday, they are available at 5, 5:15, 5:45, 11, and 11:30pm.

q: why do you only take reservations for 6-10 guests?
a: we recommend at least 6 people for the bo ssäm. guests with parties from 11 to 20 people must order the bo ssam prix fixe menu.  for more info on the bo ssam prix fixe click here or contact us.

q: can we order from the regular menu?
a: yes, since the bo ssäm is technically one dish, most parties also order from the a la carte menu so they can try a variety of dishes.

q: are there beverage pairings?
a: no, but your server can recommend cocktails, wine, beer or sake.

q: are there any vegetarian alternatives to the bo ssäm?
a: no, but vegetarians can enjoy the bo ssäm without the pork or they may order items from the regular ssäm bar menu.

q: how is the pork cooked?
a: the pork shoulder from niman ranch is slow roasted for 6-8 hours with a brown sugar and kosher salt rub.

q: how much time does it take? how long is the typical bo ssäm meal?
a: your bo ssäm will arrive at your table approximately 15 minutes after your reservation time. guest typically take two hours to finish their bo ssäm meal.

q: may i bring an outside cake to my bo ssäm?
a: no, we do not allow outside food. ssäm bar has desserts available on the menu.

rotisserie duck faqs

the rotisserie duck meal is one of ssäm bar’s large format meals. it feeds 3 to 6 people. the meal includes a whole rotisserie duck, chive pancakes, bibb lettuce, hoisin, duck scallion sauce, crispy shallots and a choice of two sides.

q: what are examples of sides?
a: the sides change frequently. some examples are broccoli salad, spicy fingerling potatoes, and pickles.

q: how much is it?
a: $140 for your entire party (think of it as one large dish), not including additional food and drinks ordered, tax and tip. please note, we only accept a maximum of four credit cards per table.

q: what are the available time slots?
a: a: we offer the rotisserie duck at lunch and dinner. the lunch rotisserie duck is offered every day at 12, 12:30, and at 2pm monday through friday. the rotisserie duck dinner is offered at 6:30 every day and at 10pm sunday through friday. please note, dinner duck reservations may be seated in booker and dax, the bar space in ssäm.

q: why do you only take reservations for 3 to 6 people?
a: this dish is recommended for parties of 3 to six people. for parties of more than 6 people, we recommend doing the bo ssäm. for parties of fewer than 3, please just walk-in and order from our a la carte menu.

q: can we order from the regular menu?
a: yes.

q: are there beverage pairings?
a: no, but your server can recommend cocktails, wine, beer or sake.

q: are there any vegetarian alternatives to the whole rotisserie duck?
a: no, but vegetarians can enjoy the meal without the duck. please note there are very few vegetarian items on the menu at ssam bar.

q: how is the duck cooked?
a: the duck, from cresent farms, long island is stuffed with duck sausage under the skin and then cooked on a rotisserie.
(please note, the duck sausage contains pork.)

q: how much time does it take? how long is the typical rotisserie duck meal?
a: your duck will arrive at your table approximately 30-45 minutes after your reservation time or after you order. guest typically take 2 hours to finish their duck meal.

q: can i order the rotisserie duck to go?
a: not yet. however, if you’re looking for catering options from ssäm bar we do offer two bo ssäm to go package for pick up only. click here for more info.

q: may i bring an outside cake to my rotisserie duck?
a: no, we do not allow outside food. ssäm bar has desserts available at dinner every night and at lunch on weekends.

general large format reservations faqs

q: why are there no reservations between 6:30pm and 11pm?
a: since we want to guarantee seats for your party, we are unable to make reservations during the dinner rush hour.

q: how far in advance does one have to reserve?
a: up to 4 weeks in advance and at least 24 hours notice for monday to thursday reservations. friday, saturday and sunday reservations close at 11:30pm on thursday evenings.

q: what if i want to cancel my reservation?
a: please cancel by clicking on the cancellation link on your confirmation email. then, you will be sent a cancellation email. our cancellation policy is as follows:
for reservations monday – friday, if you cancel less than 24 hours in advance of your reservation time or do not attend your reservation, you will be charged $50.
for reservations saturday – sunday, if you cancel after thursday at 11:30 pm or do not attend your reservation, you will be charged $50.

q: what if i need to change my party size?
a: if you’d like to change the number of guests attending, please do so by responding to your confirmation email or call the reservation hotline at 212-500-0831 and leave a message.  please note, your final headcount must be made within 24 hours of your reservations tuesday-friday and by friday for reservations saturday-monday.

q: what should I do if i am running late?
a: there is a 15 minute grace period before we relinquish the table. please make sure your entire party is prompt and arrives at your reservation time. if you will be late, please call our reservation hotline 212-500-0831.

q: may i make a reservation for someone else?
a: yes, but please have them bring your reservation confirmation.

q: may i purchase a large format meal for a friend or loved one?
a: yes, but please do so by giving them a gift card. this does not guarantee a reservation.

q: can i use my other reservation account login for the ssäm bar large format reservation site?
a: yes.

q: how many days in the future are available for booking online?
a: our calendar always shows reservations up to four weeks in advance.

q: when is the new day available online?
a: 10:00 am.

q: how do i know what’s available?
a: green check mark = available / red “x” = taken.

q: i clicked a green check but didn’t get the reservation, why?
a: reservations are given on a first come basis so you have to click fast, really fast. even if you see a green check mark you may not get the seat because someone else may grab it a split second before you.

q: why doesn’t anyone answer the phone?
a: we have a very cool voicemail system that emails your messages to the appropriate person. we’ll get your message on our blackberry/email and get back to you.

q: what happens to cancellations / is there a waiting list / do you allow walk-ins?
a: cancelled reservations return to the reservation system. there is no wait list. if you’re a walk-in and would like the bo ssäm or duck, please check with your server about availability.

q: can i make a reservation by phone?
a: no. sorry but we only take reservations online.

q: i never received my confirmation email. what should i do?
a: check your junk, spam, or bulk e-mail filters.

q: i forgot my password.
a: click on the “forgot password” link on the reservations’ home page.

q: how many reservations can i make per week?
a: we limit reservations to two per week.

q: how do i change my password?
a: log into the system and click on the “change password” link on the lower right.
