welcome to the jura, a remote region with ancient traditions of wine-making in eastern france. glass half full? barrel half empty? it has never mattered as much as it does here, where the amount of wine in the barrel ultimately dictates the flavors you in taste in the glass. see for yourself…
vin jaune (yellow is the new orange)
barrels of savagnin(that’s the grape!) are left partially filled for at least six years. a layer of yeast develops to protect the wine sous voile or ‘under the veil.’ basically a breathable blanket for the grape juice. this intense ‘yellow wine,’ with its nut-like aromas and savory flavor, is france’s best answer to sherry.
